Jaggery is a traditional Non-centrifugal cane sugar consumed in Asia & Africa. A concentrated product of date, cane juice or palm sugar, without separation of the molasses and crystals, which can vary from goldenbrown to dark brown in color. Jaggery is exclusively used as a sweetener. Added in a dish called Chakkarai pongal, prepared in the festival of Pongal, when the harvesting season begins. Also to make kalhi, sweeten fruit salads & payasam (sweet milk) that are offered to Gods.
